Beef Enchiladas

Ingredients

  • 1 lb of ground beef

  • 10-12 flour tortillas

  • 2- 2 1/2 cups cheese (who doesn't like a lot of cheese!)

  • enchilada sauce 14 oz can – any flavor we love the red and green sauce

  • optional: 1 cup sour cream

  • optional: diced green chiles

Instructions

  1. Mix together your cooked ground beef or stew meat,  3/4 of your enchilada sauce, and 1 1/2 cup of cheese in a bowl (save the extra sauce and cheese for the topping). Add in any other of the optional extras, like sour cream or dice green chiles.

  2. Add a spoonful or 2 of your mix to the center of the tortilla. Spread it down in a line in the center of the tortilla.

  3. Roll up your tortilla and place it in a baking dish.

  4. When all your enchiladas are wrapped, pour the extra sauce over them and sprinkle the cheese.

  5. Preheat your oven to 350 and bake your enchiladas for 15-20 minutes or until the cheese is melted and starting to brown.

Notes: These enchildas can also be frozen! Put into a pan with tinfoil on top (air tight) and place in the freezer until ready for use!

Boho Ranch Bolognese 

Ingredients

1. Olive oil

2. 1/2 large onion or 1 small onion

3.1 large Carrot

4. 2 garlic cloves minced

5. Salt and Pepper

6. 1 lb Doukas Farms Grass Fed ground Beef

7. 1/2 Cup Balsamic Vinegar

8. 1 Cup Red Wine

9. 1 can diced tomatoes

10. Mozzarella Balls and Grape Tomato's sprinkled fresh Italian herbs 

11. Zucchini noodle microwave veggie steamer.

 

Instructions

1. Grate carrot and onion, Mince garlic

2. Heat oil in pan to med/high heat 

3. Saute' carrot and onion until softened about 3-5 minutes, add garlic and saute' for less than 1 minute(just don't burn the garlic) and reduce heat. We like adding lots of garlic but you can choose to put only 1 clove in if you do not want as strong of a garlic taste.

4.Salt and Pepper the veggies, stir it all up and increase heat again(adding meat in a moment) 

5. Move veggies to the side of the pan, add the beef and cook through then mix all together

6. Add diced tomatoes, balsamic vinegar and wine, bring to a boil and then simmer for 10 minutes or to desired thickness.

7. Serve over zucchini noodles or pasta, garnish with mozzarella, grape tomatoes, Italian herbs, or other delicious cheeses.

Simple Family 
Hamburger Dinner

Ingredients

1. Olive oil or Bacon Grease

2. 1/2 large onion or 1 small onion

3. 1 /3-1/2 zucchini

4. 2 garlic cloves minced

5. 1/2 Red Pepper

6. 1/2 Yellow Pepper

7. Salt and Pepper

8. 1 lb Doukas Farms Grass Fed ground Beef

9. Parmesan Cheese

Instructions

1. Dice all your fresh veggies, onion, zucchini and peppers

2. Heat oil in pan to med/high heat

Swedish Meatballs

Meatball Ingredients                                    Gravy Ingredients

  • 1.5 lbs ground beef                                      - 3 Tbsp salted butter

  • 1/4-1/3 cup seasoned breadcrumbs.      - 2 Tbsp all-purpose flour

  • 3/4 small onion, finely chopped               - 1 1/2 cups beef broth

  • 1-3 clove garlic, minced                             - 1 cup milk

  • 1/2 tsp salt                                                    - 2 tsp dijon mustard

  • 1/4 tsp ground pepper

  • 1/4 tsp ground nutmeg

  • 1 large egg

Instructions

1. Mix together the ingredients for the meatballs. 

2. Form your meatballs with a spoon and put onto a baking sheet and put into the freezer for 10-15 minutes

3. Heat oil in a pan and add your chilled meatballs and cook all the way through.

4. Set meatballs aside and use your skillet to melt in butter and then whisk in your flour until browned. 

5. Add milk and dijon mustard to the milk and flour. Allow to thicken. You can add flour to the mixture if it is too thin for you.

6. Put meatballs back into the sauce and heat together, and enjoy!

Creamy Noodles & Hamburger.png

Creamy Noodles & Hamburger

Ingredients                                    

  • 1 lbs ground beef                                      

  • 8 oz medium noodles  

  • 2 cups cheddar cheese 

  • 1/2 small onion, finely chopped              

  • 2-4 clove garlic, minced                            

  • 2 cups beef broth

  • 1 can tomato sauce

  • 3/4 heavy cream

  • 2 tsp Italian Seasoning 

  • 1 tsp dried minced onion

  • salt & pepper

Instructions

1. Cook noodles in large pot of boiling water and drain

2. Brown your ground beef, add in dried minced onion while cooking, and set aside

3. Saute your onion until soft and stir in your garlic and Italian seasoning

4. Whisk in flour and once brown add in beef broth and tomato sauce. Bring to a boil, then reduce heat and simmer. Stir occasionally until thickened

5. Add pasta, beef and heavy cream until heated. 

6. Add in salt and pepper and serve!

Mississippi Pot Roast

Ingredients                                    

  • 3-4lb Roast                                      

  • 1lb of Gold Yukon Potatoes 

  • 1lb Carrots

  • 1/2 small onion in rings cut in half            

  • 3-4 clove garlic whole cloves                       

  • 1 Au Jus seasoning packet 

  • 1 Packet Hidden Valley Ranch Seasoning

  • 1 Stick of Butter

  • 10-12 Whole Pepperoncinnis

  • 1/4 C Pepperoncinni juice (if you like extra spice and tang)

Instructions

1. Place Roast in Crockpot

2. Add your Potatoes, Carrots, Garlic & onions

3.Sprinkle your seasonings over the roast

4. Place your whole stick of butter on top of your roast

5. Cover roast with pepperoncinnis 

6. Cover and cook roast up to 8 hours on high and check for tenderness

Hearty Cattleman's Pasta

Ingredients                                    

  • 2lbs of ground beef                                     

  • 1 medium onion diced

  • 3-4 garlic cloves minced

  • 2-3 Tbs olive oil          

  • 1 Tsp thyme                

  • 1/2 Tsp red pepper flakes (can add extra for more kick)

  • salt and pepper to taste

  • 1 Tbs Italian seasoning

  • 2 cans of diced tomatoes (I prefer the italian spiced tomatoes)

  • 1 box of bow-tie pasta

Instructions

1. Dice onion and mince garlice and saute'

2. Add ground beef and brown

3. Stir and let simmer the diced tomatoes

4. Cook Noodles

5. Add the beef over the top of noodles 

6. Garnish with parmesan cheese and fresh basil

Prime Rib

Ingredients                                    

  • 6lb Prime Rib

  • Seasonings

Instructions

1.Preheat oven to 425 Degrees

2. Place bones down on the roasting pan

3. When oven is up to temp, cook for 1.5 hours

4. After 1.5 hours of cooking, turn off oven and leave. Do not open the oven door.

5. After 1 hour turn oven back on to 325 degrees for another 1 hour 15 minutes

6. Take out and let rest loosely covered with tin foil for 15-20 minutes, slice and serve!
